Realistically, how do you respond to this without sounding mad?

You can respond by telling them that no machine, no matter how advanced, will never be 100% accurate. There is always a margin of error that humans will need to correct. For example, NASA back when the first computers rolled around used human computers such as Katherine Johnson to check their results were accurate!

I can't. This shit is ALREADY happening.
That said, you still need to know the basics to know what to ask for the AI.

That AI isn't being used to solve problems with high specificity and it consumes massive amounts resources even with what its currently capable of?

Why do humans need to be the ones correcting the errors? Humans also have a margin of error. Why couldn't you have error checking done by other computers?

The very fact that he used technology (paper, ink, etc.) to write that letter refutes his argument that technology is bad. As expected, criminals are too stupid to see the contradictions in their actions, even if they were prodigial mathematicians once.

Ted was in prison when he wrote this I don't think he had a choice with what he wrote with and wrote on, he probably thought he might as well respond to these good-natured letters before he dies. Not that you would value a single nice thing in life with how clearly you glossed over the letter to nitpick incorrectly as soon as humanly possible.
Sincerely yours,

This is true whether the error checker is a human or an AI. If an AI error checker has a lower error rate than a human error checker, it will replace the human.

Ted has a lot of good points but he's not literally god and was still human. Not every take he had was based or should be set in stone.
Also, he entered the academic market in the late 70s where you probably didn't even need a post-doc to be hired as an assistant professor. Had he chosen to stay at Berkely holding constant not dying of cancer he'd be a full tenure professor today and could still be doing research mathematics right now.
