Probably depends on your ancestry. My paternal line is British/Scottish and maternal is Swiss and family gatherings we can drink all day without incident or anyone getting sick or blacking out. I've seen Mexican gatherings turn to shit in a few hours. If I don't have a drink for a few weeks the first sip is super delicious, like my body recognizes it and gives me dopamine. I imagine the sterilizing effects of ethanol on water gave a selectional advantage to who could consume it without issue. It's also a social lubricant, and may have affected courtship.
