What can reasonably be done to escape the effects of pollution?
I'm typing this using a plastic keyboard that is fucking with my hormones. Babies are born with microplastics. Supermarket meat has been pumped with hormones. Fruits and vegetables are full of toxins. Even fish from the sea are full of mercury.
How on Earth are you supposed to have a healthy life?

Nothing, you can't do anything at all. We have 8 billion people and nearly all of Earth's land has been built for our use. Even if the world stops consuming shit and becomes far more efficient with their energy the damage has already been done. In just 100 years humanity fucked up the Earth for millennia in pursuit of this false sense of happiness.

The world we live in has never been seen before, but the best you can do right now is just work on yourself. Find something you might enjoy like playing a musical instrument. Learn something about gardening. Stop watching porn and mindlessly scrolling social media. Just little things like that to improve your well being.
