official catholic doctrine states that during transubstantiation the wafer changes into flesh except for its "kind" which they define as "apperance, texture, and chemical makeup". so basically it totally turns into flesh and blood except in any way that can be measured.
at least protestants admit its metaphorical

The problem with protestants is that they wont believe that God could take from His substance and make Himself bread if He so wished.
