Can our night sky be fundamentally rearranged due to the fact that it takes massive amounts of time for the light from stars to reach us, so therefore when we look at a star, it’s not even in the same position that it seems to us here on Earth?

Yeah. That's correct. Some of the closer stars are exactly as you see them but especially for the further ones they aren't currently in the position seen in the night scky.
