colloquially the word theory is synonymous with the word hypothesis. that is not the correct way of understanding the word theory within a very strict scientific sense. a scientific theory should make specific predictions into the future. the current "theory" of evolution cannot make predictions into the future and therefor isn't truly a theory. the word hypothesis or framework would be better word to describe it.
why believe this hypothesis? because there is a lot of evidence to support it. the fact that all of life shares a lot of genes strongly supports the idea of a common ancestor.

If cells weren't composed of water and didn't evaporate in space, if cells could reproduce despite there not being water for the cells to exist like they do on earth, and they were exposed to the conditions of space including vacuum, would they eventually adapt to the conditions in space through exposure alone? I've talked to ChatGPT about this and it said that one of the main issues about space is the absence of required conditions that make water not evaporate and as a consequence, cells not being able to reproduce in space due to this. If magically there were some type of living organism that wasn't mainly composed of water and could reproduce without it, would this mean that there could in theory be ''living'' things in space and that they would adapt to the conditions?
