The difference between math and your dumb example is that mathematical concepts are chosen based on a correspondence to reality. Whereas your example is just meaningless rambling.
You can just as easily define axioms and rules that have no correspondence to reality. You can even study those and develop an entire system based off them. People don't do that because there's no point, you can't learn anything about reality based off it

Coming up with p-adic numbers is a natural result of studying the rational numbers and trying to fill in the gaps (i.e. completion).
Every completion of the rational numbers Q is either the p-adics Q_p for some p or the reals R.
Then the reason you study them is because they can tell you things about Q.
If you know something is true over Q_p for every p, and over R, then it is probably true over Q as well.

In the case of computers, yes you could literally build a register circuit on a breadboard and induce a 2-adic (a.k.a. binary) integer via exposing the circuit to a voltage. You can literally measure the source voltage of each transistor in the register on the breadboard and as a result measure your integer. It's how analog to digital converters and computer arithmetic/memory operations work.
