dunno about the science, but its very obvious why you dont notice the gorila:
brain has only so much computation power, so it must cuts the corners somewhere. if you are focusing on an actor who moves, talks about some deeper subject then you simply dont have any reserve power to carefully scan the rest of screen to notice something is off: a dude in costume is there!

1) you're supposed to follow the players wearing white, so you're actively filtering out everyone wearing black
2) following the ball being passed makes you repeat the same action again and again, adding inertia to the point of focus
3) the gorilla moves slower than the balls and the players, making it relatively static, blending with the background
so there's like 3 elements for why it's "invisible", each one with a different mechanism.
