Ive seen and heard people talk about the gravitational field as like a plane. And big things in it cause it to curve down you know. But at what Z-Level does it start. Or is the whole it being a plane thing fabricated

It's just an analogy, don't think too hard about it. Visualizing a plane deforming is meant to help you intuitively grasp how objects are pulled toward other objects, that's all.

Its a really bad analogy. The curvature is easier to understand by measuring the angles of a triangle drawn on the surface/space you are interested in measuring.
Like, in space take 3 lasers in 3 points, A B C making a triangle, shoot lasers at each others.
Measure the angles of the triangle, they wont add up to 180 if the surface isnt flat.
This is all it is, angles are zonky, people already have some intuitive experience with that because the surface of the earth is also not flat and you see the effects like these ships that disappear beyond the horizon etc
