I don’t necessarily disagree, but I feel like macroeconomics of fishing COULD be responsible for this more than “fish that taste yucky”. Anecdotally I’ve tasted probably 30 different kinds of fish and enjoy them all (fun question OP). I’d like to see an excel list of regular meaty fish (so no weird ass jellyfish or sea cucumber shits) and a flavor profile. Somebody ChatGPT this and post? Never mind I asked it myself. Your question is based on a false assumption.
That being said, most people eat what they got used to eating while being kids. And most kids are fed what is available which is fish. Good luck cathing birds outside and dealing with bones for an hour to get a tiny bit of meat. The same with reptiles. While any fish from tiny to large can be cooked pretty fast.

On second thought, I've decided that your word choice is lacking rather than the framing of the question.
"Palatable" means it tastes good. "meh, it's ok" is not synonymous with "palatable." Thus, most fish, being bland, is certifiably unpalatable.

What are some "bad" fish then? We can basically name a fish and people are eating it somewhere. Maybe not in huge amounts because it's a pain in the ass to cultivate, but we'll still eat it.
