Well firstly, it's more of a metaphorical thing, in the same manner as "I'd wreck him" or "I'd destroy him" even though at best the wrecked and destroyed opponent would just be getting a good kicking. From a more technical standpoint, I'd consider crushing to refer to taking someone to the ground via pressure from above and in front, as opposed to targeting the legs to bring him down. Imagine how a bear might rear up and almost dive down onto a man as it attacks. Sumo has a variety of match-winning techniques that are described as crushes so you might want to visit the sumo thread and ask for some example footage to see if that matches up to what you imagine.
