Wash it after every class. You might be able to get away with it in a striking art, but you're all over someone so you're not only absorbing your sweat, but everybody else's sweat.
Normally I'd say ask your coach, but if you tell them you're washing your gi every three classes, you're probably getting kicked out until you clean it.

Buy multiple if you don't want to be constantly doing laundry, otherwise yes every time. And occasionally hitting it with some oxiclean or other appropriate secondary laundry additives. Check your brands recommendations on them or ask around the gym.

i too only have 1 gi. this is a routine that i found useful. I would only wash it in the machine properly and machine dry it once a week.
But after every practice, id take the gi to the shower with me and let it soak in shower to wash off sweat and dirt. which are the main things that makes bacteria grow and make the gi smell. Then i would air dry it by hanging it.

Once a week is OK.
One thing that is important is to leave it in the sun as soon as possible.
I used to train from monday to friday and usually washed it once a week. Had two gis, one for each week.
