The knee seems like the ultimate hard counter to grapplers and a fight ender when it happens.
How does the striker get really good at kneeling the grappler as he shoots in?

By shooting from the clinch and/or using a setup. Most common and easy to find example is the overhand/shoot mixup. Tons of different styles, weight classes, and eras to pull it from.

If you are 85+kg don't go to your knees, work the snatch single leg
