It’s weird that nobody actually gave a real answer.
I work in automotive design. We 3D print parts to check tolerance stack ups that aren’t visible in the idealized CAD environment. On a heavy truck we have parts that can shift as much as 6” just due to tolerance. I can 3D print a part and see if it works on a random sampling of trucks as a sort of cheap sanity check.
“It fit in cad” is literal joke people trot out when their parts are fucked up.

I think it's similar to how you can read from digital mediums like ebooks to physical books. It's more effective to read from a digital device, but there is sense of value when having the physical item with you. In some cases having the physical object can help see things you wouldn't recognize when having it on screen.

Once cured and treated, resin plastic isn't the same toxin. If you don't have a proper work station to seperate the chemicals and protect yourself, it is idiotic to be exposing and putting your health at great risk.
In my case, having the printed preview helped me see that the design wouldn't look good from a distance. It was a small decorative ornament that I put too much detail in. With a print preview, I was able to see how it seemed too bulky and would look better with less detail.
Of course this is my anecdote, maybe I'm not good at seeing the whole thing in its entirety, but it was a good experience to work with something that I hadn't had the chance with before.
All in all, I've seen it more as of a hobbyists tool that can make some neat things.

It's not like it's slowly evaporating into the air once the printing is finished. It's a physical object, not something ephemeral. It's as toxic as anything else you have in your environment that's made of plastic.
Obviously if you printed a cup or a plate with it, you shouldn't eat/drink with it, but that's mostly the same for resins of any type. Whether you use it in a 3d printer, make resin castings, or use it on boat repairs. There's food-safe resins, but only really for short periods of time. Not really because it's toxic and you can die from it, but because resin just isn't cut out for that sort of thing.
Point is, the printing resin is only toxic when you're printing with it. Once you have a finished print that's cured, it's the same as any other object.
If you treat your materials like any other chemical, as if you were in a shop or other workspace, you really won't have any problems with it. As long as it's in a well ventilated area you're fine. You're at much at risk from the fumes of it as you are spraying cleaning solvent when cleaning your bathroom.
In the case of "why do people want to print stuff?"
It's just people want specific things, and they can have those things without having to compromise with something some company made, or having to have that thing manufactured specifically for them at significant cost. If you can print something and your only price is the cost of some filament/resin, and the time to paint it (if you want), why not? If it's shit, you can just print another and try again.
3d printing right now is pretty much a hobby for most people, same as flying RC planes or model making.

You're thinking too singularly anon. There's more you can print with a 3d printer than print coom models. The people using it to print coom stuff is a small minority of the people 3d printing.
There's plenty of hobbyists that use it as just another tool to in their creative process of making things, just like a CNC or laser cutter.
There's also plenty of hobbyists that use it as a way of making decorations for their space, be it figures, dioramas, and yes, even coom models for some of them. Then again, remember that those kinds of figures aren't made in a vacuum, and there's already an industry selling waifu figures and stuff from companies. The people making 3d prints of the same stuff are just skipping the manufacturing process and doing it themselves.
What people choose to decorate their space with isn't really any of your concern.
