Beginner here. I've set these edges as creases, but how do I achieve a similar effect with vertices? I want to make this sword sharp.

Add a support loop cut and put it close to the point to constrain the shape.
It's worth considering if you really want to use subdivision surface here. Subsurf is meant for organic objects with lots of natural smooth curves, and it'll increase the polycount. For artificial/geometric shapes with lots of sharp angles, you can try hard surface modelling instead.

Sorry, could you please explain? It does need to have a rounded blade shape (based on the refs I'm using), but just the point and edge need to be sharp.

You can crease vertices as well from the Vertex menu.
