How about a format where there's 2 amateurs who can only use striking until they are grappled to get off and a pro who can only use grappling/wrestling in a mixed martial arts contest sound like?
"We can totally take out this pro!" mentality can be demonstrated to be false with this format I think it would be entertaining to say the least.

It's literally just laser tag but when you lose you can go punch the other guy and if you beat him up you undo your loss and are declared the winner instead (as you should, regardless of the inclusion of any boxing).
