You're seeing edited snippets of life in specific stables, that are put together for the aim of entertaining viewers and encouraging people to join up. There's a reason that there are only ~600 professional rikishi in all of Japan, it's a harsh life and most people will leave in their mid-thirties with no qualifications or relevant life experience.

Sorry, I don't consider manual labour a valid career for a man heading into middle-age with a slew of chronic injuries from doing sumo for twenty years. It's a young man's job, while he figures out how to make some proper money without having to sweat and bleed for it. If such a job appeals to you, then that's great - someone has to build the offices and maintain the roads and fill up the landfills and everything else. White-collar work is the only work I'd ever recommend to anyone, though, and life as a sumo wrestler effectively cuts you off from that path, which is why most Japanese boys choose more rewarding options.
